Abstract:
Supramolecular Medicine (Supra Med) combines chemical and state-of-the-art chemical
biological approaches to unravel the formation and function of supramolecular
protein/peptide assemblies in health and disease. Additionally, it provides a
supramolecular formulation for diagnosing, treating, and preventing disease. [1]
My research centers on fundamental aspects of molecular recognition in chemistry and
biology using SupraMed approaches.
In the last few years, we have investigated the supramolecular assembly of gliadin
protein and its peptides connected to gluten-related disorders. [2] These disorders have a
worldwide prevalence of 5%, including autoimmune celiac disease, non-celiac wheat
sensitivity, and wheat allergy. It is accepted that humans do not fully digest gliadin,
producing large peptides that reach the gut mucosa and blood system, eliciting different
immune responses in susceptible persons. Many clinical and biomedical efforts aim to
diagnose and understand gluten-related disorders; meanwhile, the early stages of the
inflammatory events remain elusive. My group discovered that proteolysis-resistant
gliadin peptides form supramolecular assemblies that activate inflammatory and innate
immune responses in cellular models. Since oligomerization and a parallel β-structure
are the hallmarks of protein aggregation diseases, like amyloidosis and
neurodegenerative diseases, we hypothesized that accumulation and aggregation of the
gliadin peptides might be an unrecognized disease trigger. [3] The last results will be
presented on the mechanism of the self-assembly process of gliadin peptides and their
function in human cell lines.
BIO:
Veronica I. Dodero is an Argentine-Spanish scientist whose research topics
include self-assembly in water, focusing on peptides and small molecules.
During her academic career, she was awarded numerous prestigious fellowships
from CONICET (Argentina), DAAD, and Alexander von Humboldt (HERMES). She
was Adjunct Professor of Organic Chemistry at the Universidad Nacional del Sur
(AR) and emigrated to Germany in 2017. Since then, she has been investigating
the effect of gluten-proteolysis-resistant peptides in human nutrition and
gluten-related disorders at the Faculty of Chemistry at Bielefeld University.
